• Sweetbread brioche with porcini mushrooms

Main course :

• Ballotine of capon stuffed with chestnuts

• Pan-fried prawns flambéed with Amazon champagne (Palmer & Co)

  Braised fennel

Cheese :

• Mature Brillat-Savarin, greens and walnuts
